  • 15 g of pasta
  • 10 ounces arugula
  • 2 small zucchini
  • 2 ripe tomatoes
  • salt and pepper
  • 2 tablespoons olive oil
  • lemon juice
  • mint leaves


Cook the pasta and zucchini cut into slices (each separately), cool and mix with arugula and tomatoes cut into cubes. Season with lemon juice, olive oil, salt and pepper, if desired. Chill and serve decorated with mint leaves.
