While turkey and cranberry reduce your hunger, green mesclun, onions and yellow peppers will satisfy more than half of your daily needs for vegetables, which will make you more filling and you’ll have a quick dinner or lunch.
No need to bake turkey, or you can buy ready-made turkey or turkey if you have leftovers, you can use them for this salad.
For this salad, you need the following:
- 2 teaspoons spicy vinegar
- 1 teaspoon mustard
- 3 teaspoons extra virgin olive oil
- 8 cups mesclun mix or green with fields
- 350 g of roasted turkey cubes
- 1 ½ cup yellow pepper
- 1 cup dried cranberries
- ½ cup thinly chopped onion
As the first in a small bowl, mix the vinegar and mustard, slowly pour the olive oil, add salt and pepper to taste and set it aside. Then in a large bowl place the green, add the sliced turkey, yellow peppers, cranberries and onions and stir gently. Just before serving the salad, sprinkle with a mixture of vinegar, mustard and olive oil. And the salad evenly distribute the four vessels and have salads for four meals.
