Beans, greens and mangoes this healthy recipe turned into a fun meal rich with 12 grams of fiber. But as far as eclectic taste, tropical mango, spicy mustard and fat pine nuts, would you remove from the fact that a healthy head and do it one more time to think about what you could be a fruit salad.
For this salad you need:
- 2 cups chopped fresh mango
- 1/3 cup fresh orange juice
- 2 teaspoons olive oil or canola flowers
- 2 teaspoons mustard
- ½ teaspoon salt
- ¼ teaspoon pepper
- 4 cups lettuce
- 1 cup finely chopped red cabbage
- 1 cup thinly sliced pig
- 2 doses (425 g) of beans, rinsed and drained
- ¼ cup raw or roasted pine nuts
In a small cutter or blender, add ¼ cup mango, OJ, oil, mustard, salt and pepper. In a large bowl, add lettuce, cabbage, Pig, beans and remaining mango and pine nuts (pine nuts). All this mix gently, add the vinegar just before serving and stir. Then divide the mixture evenly into four bowls of salad.

One bowl of this salad contains 372 calories, 14 grams of fat (1.5 saturated fat), 665 mg sodium, 52 g carbohydrate, 12 grams of fiber and 12 grams of protein.
Tip: If you do not have a blender or time to make mango vinegar, you buy at the store in a bottle fat free mango vinegar.
